Buttermilk biscuits anyone?

Anyone who knows me knows that I love a good biscuit.  My love for biscuits started as a young girl .  Every year we would take a visit to my grandparents home in Nashville, TN and among other delicious Southern fare, my grandmother's biscuits were my favorite.  At that time there were about 12 family members who gathered at the table, and  on Sunday morning Alice Walker, my grandmother, would put on a show!  Who knows what time she actually woke up to get started?  I have always been an early riser, and by 8am she already had several batches of biscuits ready.  Soft, flaky, melt in your mouth , perfection.  My grandmother used lard in her cooking in those days and I enjoyed every bit.  She must have made hundreds of biscuits, because I recall eating several at a time.  These days I do things differently. I only make about 2cups worth of biscuits, because I could easily eat 5 to 6.  So, if I limit my batch I do not exceed three biscuits at a time.

 This is my adapted recipe from one of my favorite cookbooks, "The Joy of Cooking".

2 cups all purpose flour
2 tsp baking powder
4-6 TBL melted butter
1 cup buttermilk
1/2 tsp baking soda

cook at 450 degrees F
time to cook 8-12 minutes

Yields approx 9-12 biscuits depending on size.

I mix everything together at one time and just go forth.  I like to use a glass turned upside down to make the circular cut outs of dough.  This makes a fairly uniform biscuit.  Enjoy!  Afer eating this meal incorporate some form of movement.  Go on a walk, jog, or do yoga.

A better pancake! This one uses flax seed, flour, rice milk and bananas

To make this pancake you will need
1 1/2 cups flour
1 3/4 TBLspoon baking powder
1 1/2 cup rice milk or organic cow's milk or milk of your choosing
3 TBLspoon melted butter
1 egg
1 TBLspoon flax seed
2 ripe bananas
mix liquid ingredients into dry ingredients
get a griddle or your favorite pan, cook and enjoy !

Roam free chickens

I always feel good about buying farm fresh eggs and roam free chickens. Today I went out to Hepzibah farms in Spring Hill, Florida to get my "dressed" chicken and fresh off the farm eggs. I get to see the chickens roaming the land, and they are quite friendly. One chicken approached me without fear, and was waiting to be picked up and coddled. When I noticed how friendly the chickens were I thought immediately that I would not make a good farmer. It would be difficult for me to slaughter my animals. But, as I choose to eat meat, poultry and fish, I am comforted to know that the animals I choose to eat at least have a very healthy life.

You may wonder whether there is a noticeable difference between grocery store bought chickens and these raised on a roam free farm. Absolutely. The muscle is well developed on the roam free chicken, and the meat has a wonderful "fresh" quality. Will show some pictures of the chicken I purchased and how it looks after I cook it in my Dutch oven.
